Go-To Beef Roast (Instapot or Slow Cooker)

This is one of the easiest and versatile recipes for our Grass Fed & Finished Beef, which has so much flavor and tenderness. It has never failed to make a great impression. I serve this for large gatherings or if I need a multiple meals I can easily reheat during the week. Pairs well with fresh homemade bread!


Ingredients:

2-3 lbs Independence Ark Grass Fed & Finished Pot Roast or Chuck Roast (any roast that has a bone in it)

1 tsp salt

1 tsp pepper

2 tbsp Olive Oil

1.5 c. Bone Broth

15 oz Tomato Sauce

5 peeled carrots cut in half

7-10 small potatoes

2 c. sliced mushrooms

1 onion quartered

5 crushed garlic cloves

1 bay leaf

2 tsp of either Herb de 'Provence, Savory Seasonings, or Italian Seasonings


Instructions for 8 quart Instapot:

  1. Salt and Pepper (or you may substitute with 2 tsp of Cavender's All Purpose Greek Seasoning) your beef, and let it come to room temperature

  2. Select Sear function on Instapot

  3. After coming to temperature add olive oil and brown your beef (3 min on both sides, 1 min on edges)

  4. Add liquid ingredients and stir, make sure all brown bits are scraped off of the bottom of the pan

  5. Add all other ingredients to Instapot (potatoes last)

  6. Put on lid, seal vent, select Pressure High 45 min

  7. Quick release at end of cooking.

Modifications for slow cooker:

  1. Brown Beef in Cast Iron Skillet with olive oil

  2. Add all Ingredients to Slow Cooker, cook on low for 7hrs
